Alcohol free tiramisu recipe: how to make tiramisu without alcohol
How to make alcohol free tiramisu: the perfect tiramisu recipe the whole family can enjoy
Tiramisu is one of the most classic Italian recipes and in its most traditional form it has a dash of liquor, usually Marsala.
However, you don’t need liquor to make a nice tiramisu and it is common for home made tiramisu recipes not to include it at all. This is the case for the recipe we use in my house too!
This is our alcohol-free tiramisu recipe.
You can use to make a traditional tray of it or a really cute way to present it is by breaking the biscuits and use individual cups instead.
If you like berries, raspberries, strawberries and even blueberries go well with it (I prefer the first two, personally) and make for a lovely presentation and they add a little bite of acidity too that works really well!
Good to know! If the coffee is too strong for members of the family, a good brand of decaf Italian coffee can work too or you can go completely off coffee with this alternative recipe for a tiramisu with no alcohol and no coffee.
Step by step, alcohol free Tiramisu recipe
This is a delicious, alcohol free tiramisu recipe with all the taste of the classic recipe and none of the alcoholic content.
Ingredients:
- 250 gr savoiardi biscuits (ladyfingers)
- 3 safe eggs, separated yolks and whites
- 100 grams sugar
- 250 grams mascarpone
- Coffee – I make one large moka of it, which is about 4 espesso cups but usually do not use it all
- Milk (to dilute the coffee; a glass is usually enough, although it depends on how wet you want the biscuits to be; you can also. dilute the coffee with hot water if you prefer a milder taste)
- Dark cocoa to sprinkle on top
Need to know: Eggs in Tiramisu are raw, therefore it is paramount you make sure they are safe. Depending on circumstances, this may mean fresh eggs from a safe source or pasteurized eggs – always check egg safety and do not use them if in any doubt. Please note that Pasteurized eggs are a little different from fresh eggs in terms of consistency and the whites do not whip up as easily: if cooking for a party, I recommend to do a trial run first.
What do you need to make this alcohol free Tiramisu recipe
- A large bowl for whisking egg whites
- A whisk (ideally electric but manual will do too)
- A second bowl to mix the other ingredients
- A tray (this makes one for about 6 people, 3 layers of biscuits) or individual portions
Step by step instructions:
In a large bowl, mix the egg yolks and the sugar until they form a light colored, fluffy cream (you can do this by hand or by food mixer).
Add the mascarpone and fold it in until you obtain a smooth mixture.
In a separate bowl, whisk the egg whites until the make stiff peaks (use an electric mixed with whisk attachment for best results) and then very gently fold them into the main bowl. Your tiramisu cream is ready, now set aside and work on the biscuits.
Make espresso and let it cool, then add milk to taste.
Pour a small amount of room temperature milk+coffee in dish so that it coats the dish and gently place a lady finger horizontally in it, then take it immediately out and place it in your tiramisu tray.
This is a delicate moment: you want the lady finger to get in contact with the coffee but you don’t want it to soak up so much of it to dissolve into a spongy mess! A quick tap in coffee is all it takes for the perfect result.
Do the same with more ladyfingers until they cover the bottom of the tray (one layer only) then use a large spoon to pour on top of them one layer of cream.
Smooth it out with a spoon, then repeat with a second layer of lady finger, and a second layer of cream. Smooth very well and sprinkle dark cocoa on top. Put in the fridge for 2 hours and serve cold.
